With some cheese, chicken, queso, and salsa on hand, you can turn the situation around in no time. These enchiladas turned out to be absolutely fantastic, making them a go-to choice for our family of six. Thanks to Sam’s Club, where we source most of our ingredients, this dish is made even better!
Should I use corn or flour tortillas for enchiladas?
Traditional enchiladas are typically made with corn tortillas. However, for our Sam’s Club Chicken Enchiladas, we prefer using flour tortillas. Of course, if you have a preference for corn tortillas, feel free to use them instead. Either way, you’ll still end up with a delicious dish!
Do I have to use a rotisserie chicken?
Absolutely not! While we love the flavor and convenience of using a rotisserie chicken, you can use any cooked chicken you prefer. The beauty of this recipe lies in its simplicity, and using a rotisserie chicken saves you time. Sam’s Club never disappoints when it comes to chicken, making it a trusted choice for many of our recipes.
What should I serve with enchiladas?
When it comes to serving our Sam’s Club Chicken Enchiladas, we have a few suggestions. Yellow rice and Simple Southwest Black Beans or Cheesy Refried Beans make excellent side dishes. You can also pair the enchiladas with our Roasted Street Corn Salad for a burst of flavor. And to round out the meal, a nice tossed salad works like a charm!
Ingredients for our Sam’s Club Chicken Enchiladas:
- 8-12 Tortillas
- 3/4 Cup of Queso
- 1/4 Cup of Salsa
- 2 TBS Cilantro
- 1 Cup of Shredded Cheese
- 2-3 Cups of Rotisserie Chicken
- 1 Can of Green Chiles
- 1/3 Cup of Chicken Broth
How to make our Sam’s Club Chicken Enchiladas:
- Start by removing the meat from the rotisserie chicken and dicing it. If you have leftover chicken, store it in an airtight container for later use.
- Take a tortilla and fill it with some chicken, approximately 2 TBS of shredded cheese, and a sprinkle of cilantro. Roll up the tortilla and place it seam down into a shallow greased baking dish. This will prevent the enchiladas from coming apart while baking. Repeat this process until the baking dish is full (usually 8-10 tortillas).
- Turn your stove to medium heat and combine Panco’s queso, the entire can of green chiles, 1/3 cup of chicken stock, and the salsa. Mix and heat on low until the sauce becomes thin and well-combined, which takes less than 5 minutes.
- Remove the sauce from heat and pour it evenly over the tortillas. The sauce will be thin, but that’s perfectly fine. It will thicken up when baked and allowed to rest.
- Cover the dish with foil and bake at 350°F for 30 minutes. This will prevent the enchiladas from drying out. Once baked, garnish with cilantro and serve.
You have the option to double the cheese sauce if you’re a fan of extra cheesiness. Feel free to indulge yourself by swimming your enchiladas in that delightful cheesy goodness!
