Skewered chicken breast pieces and vegetables marinated in simple everyday spices then air fried until tender and juicy. This recipe makes a great appetizer or a healthy dinner the whole family would love.
Chicken skewers recipe in the air fryer
Ever wondered if you can cook chicken skewers (kabobs/kebabs) in your air fryers, yes you can and it is quick and easy to make too.
In fact, you can make anything skewered in the air fryer or air fryer oven from beef, pork, lamb, shrimp, vegetables, fruits, and more. If it can be cooked in the conventional oven then you can definitely cook it in your air fryer too.
This recipe is great as an appetizer when entertaining or a light dinner the whole family would enjoy. One of the joys of cooking with an air fryer is that you can cook outdoors on days that the kitchen is too hot because of hot weather.

Chicken on skewers marinade
I marinated my boneless skinless chicken breast pieces and chopped vegetables with the following
Sweet chili sauce
Herbs de Provence
Smoked paprika: substitute with sweet paprika
Red pepper flakes: substitute with cayenne pepper or omit completely if desired.
Vegetable oil
Garlic granules
Salt and black pepper
Vegetables skewered
Bell peppers: I used red, yellow, and green bell peppers
Zucchini: also known as courgette in the UK
Onions: I used red onions substitute with white or yellow onion
Tools needed
Air fryer: I used a COSORI 5.7ltr air fryer and it was large enough to fit 5 skewered chicken with ease.
Skewers: I used long wooden skewers and cut them to fit into the air fryer basket. You can use metal skewers too but make sure to use the one that would fit into the air fryer basket conveniently.
Tip: soak the wooden skewers in water for a few minutes while the chicken is marinating, this would stop it from burning during cooking.
How to make air fryer chicken kabobs (chicken skewers)
To a large mixing bowl, combine chicken pieces, salt, black pepper, red pepper flakes and mix to combine.
Add chopped bell peppers, chopped zucchini, onions, smoked paprika, herb de Provence, sweet chili sauce, vegetable oil and mix all to combine.
Cover the bowl with a plastic wrap/cling film and marinate for at least 30 minutes or longer if time is not of the essence.
When you are ready to cook, thread the marinated chicken and vegetables on the skewer, repeat the process until all are exhausted.
Preheat the air fryer at 200C/400F for 5 minutes then spray the air fryer basket with cooking oil
Arrange the chicken skewers in the air fryer basket in a single layer making sure it is not overcrowded. Cook at 400F/200C for 10 minutes or until fully cooked and the chicken is no longer white when cut into. carefully flipping the kabob halfway through.

Hot grill or griddle pan instructions
Thread the marinated cubed chicken and vegetables into a skewer and cook on a hot grill or griddle pan flipping every 2 to 3 minutes until cooked through.
Tips
- If you want a grill mark on your chicken skewers then place an air fryer rack/trivet inside the air fryer basket before cooking.
- Cut the chicken and vegetables into even sizes so they cook evenly.
- If using metal skewers, be careful not to burn your hands when picking it up as it would be very hot. leave it to cool before serving.
How to store chicken kabobs
Fridge: Store leftover cooked chicken kabobs in an airtight container in the fridge for up to 4 days.
Freezer: thread the chicken and bell peppers and freeze from fresh for up to 3 months
