Are you looking for a delicious and hassle-free meal? Look no further than these mouthwatering Grilled Steak Pinwheels! Made with juicy skirt steak layered with basil pesto, salty prosciutto, and provolone cheese, and topped with a homemade Charred Scallion Gremolata, these pinwheels are a flavor explosion that can be prepared in just 20 minutes!
Prep Your Steak for Grilled Steak Pinwheels
Before you begin, soak some bamboo wood skewers in water for at least 15 minutes to prevent them from burning over the heat. Next, place your inside skirt steaks on a cutting board. Cover each steak with parchment paper or plastic wrap, and use a heavy mallet to pound the steak until it is less than 1/2″ thick. Make sure all the steaks are evenly thick for even cooking!
Assemble Your Steak Pinwheels
Now, let’s assemble the pinwheels! Start by topping each steak with a tablespoon of basil pesto, spreading it evenly. Then, add 2-3 slices of prosciutto and provolone cheese on top. Carefully roll up the skirt steaks lengthwise to form pinwheels and secure them with two soaked wooden skewers. Slice each pinwheel between the skewers to create two separate pinwheels. Finally, coat the outside of each pinwheel with canola oil and season generously with kosher salt.

Let’s Grill!
Now, it’s time to grill the pinwheels! Preheat your grill to a high heat of around 400ºF for two-zone cooking. Start by searing the pinwheels on the hot side of the grill for about 1 minute on each side to give them a nice crust. Then, move them to the cooler side of the grill and let them cook for 10-15 minutes or until they reach an internal temperature of 120ºF.
Time for the Sauce
While the pinwheels are cooking, let’s prepare the Charred Scallion Gremolata! Start by charring scallions over the flames for 3-4 minutes to give them a smoky flavor. Once charred, remove them from the heat and chop off the root bulbs. Slice the scallions into thin pieces and place them in a bowl. Add chopped parsley, minced garlic, and lemon juice, and mix well.
Serve Your Grilled Steak Pinwheels
Once the pinwheels are cooked, let them rest for 10 minutes before serving. Slice them into smaller pieces, top them with the prepared gremolata, and finish them off with a drizzle of balsamic vinegar. Trust me, this simple yet flavorful meal is a bomb of deliciousness that you won’t be able to resist!
