Picture this: Mr. C. brings home a package of flanken-style ribs, and I mistakenly hear “Frankenstein” ribs. Talk about a hilarious mix-up! Fast forward a couple of months, and Mr. C. asks when I plan to cook these ribs. Surprised, I examine the package and realize they’re not what I expected.
Flanken-style ribs are thinly sliced pieces of meat, marbled with fat and connective tissues, making them incredibly tender. They are seasoned with a dry rub and baked to perfection, then finished off with a generous slathering of BBQ sauce. Trust me, they are absolutely delectable!
Embracing New Culinary Discoveries
Now, here’s a fun fact that I recently stumbled upon. Short ribs are beef, while the pork equivalent is spareribs. Who knew, right? I guess you learn something new every day, even after being the reigning chef in your own kitchen for 57 years!

The Recipe: Unbelievably Easy and Delicious Flanken-Style Ribs
Rib Rub:
- 2 T. paprika
- 2 tsp. freshly ground black pepper
- 2 T. kosher salt
- 2 tsp. granulated garlic
- 1 tsp. cayenne
- 1 tsp. ancho chili powder
- 2 tsp. dried oregano
- 2 tsp. dried thyme

Ribs:
- 4-8 bone-in flanken-style short ribs
- Rib rub
- BBQ sauce
