Bacon Wrapped Bratwurst Sheet Pan Dinner
It all starts with plump bratwursts wrapped in crispy bacon and served over a layer of tender green beans mixed with red and gold baby potatoes!
What is Bratwurst?
They’re a type of pork sausage originating in Germany that is usually grilled, fried, or roasted in this case. They’re delicious on a toasted bun, but we’re amping up our game with bacon.
Ingredients Needed

- Baby potatoes – red and gold or medley
- Green Beans – fresh, or frozen thawed and drained
- Avocado Oil
- Salt & Pepper
- Garlic Powder
- Bratwurst Sausages – uncooked, any flavor
- Bacon – not thick cut
- Parsley – fresh for garnish
How To Make Bacon Wrapped Bratwurst
This cooking technique involves wrapping bratwurst in a layer of bacon, then roasting them over a layer of potatoes and green beans. It’s so easy to put together!
Don’t forget to preheat the oven and line a large-rimmed baking sheet with foil for easy clean up.
Prep Vegetables
Add cut potatoes and green beans to the baking sheet, then drizzle with avocado oil, using your hands to help coat all the pieces with a little oil.
PRO TIP: If you don’t want to get your hands oily, simply stir around with a large spoon or use a pastry brush to brush the oil on.
Season well with salt, black pepper, and garlic powder. Arrange the potatoes and green beans in an even layer, giving them plenty of space so they aren’t overcrowded.
Prepare Bratwurst
Wrap each bratwurst with one strip of bacon, making sure the bacon is not overlapping.
Lay the bratwurst on top of the potatoes and green beans in an even layer. This will allow the bacon drippings to help season and cook the potatoes and green beans.
Roast In Oven
Roast in the oven for 40-50 minutes at 425 degrees F. Turn the bratwurst over halfway through cooking and stir the potatoes and green beans around as well.
Bratwurst should reach an internal temperature of 160 degrees F when fully cooked.

- Not a fan of green beans? Use a hearty vegetable like broccoli, cauliflower or brussels sprouts.
- Make sure not to use thick-cut bacon! It takes longer to cook and won’t be as crispy.

How To Store Bacon Wrapped Bratwurst
SERVE: Warm and fresh from the oven is best!
STORE: Once cooled, leftovers can be transferred to an air tight container and refrigerated for up to 3 days.
